Read about the trick of putting a pizza stone above and below the pizza being baked. Had an idea, when thinking about baking bread in a stone oven.

Get a properly sized chimney flue (lasgest which will fit) and have it cut down in length to fit in a home oven.
Place the in the oven to pre heat. When hot, rotate the flue so opening is toward front, carefully, and load the flue with item to be baked. Rotate the flue to the original oposition and bake item. This should simulate very closely the stable hat environment of a stone oven.

Good Luck!

Bill,

Coincidentally, I just discovered your website today! I was trying to figure out why my thin crust is too hard (I think you could use it to shovel snow)!

I look forward to trying your recipes!

Maybe you should open the site up..... I'm sure you could create a huge following from around the world. I wouldn't think the way you cook your pizza is the same way someone does in, say, Italy, France, Australia or even Japan. But we all love pizza and techniques could be shared.

Bill, you have saved my butt. I have guys here wanting food and i'm making your stromboli, albeit, i didn't let the dough proof in the fridge. And since i can't find Cento Pizza Sauce in ORegon, i also thank you for the Neopolitan sauce recipe. I think. I burnt my taste buds trying to check it out. :) So far so good! Thanks for pizzamaniacs!!!

Look forward to seeing what you've been up to.
